Homefried Potatoes

I haven’t been Mofo’ing this week since my husband has been out of town.When he is gone, and I am left with the kids and dogs all by myself, I tend to just scratch by. We’ve eaten a lot of cereal and peanut butter sandwiches this week as a result. I did manage to cook some spaghetti during the week, but certainly nothing elaborate.
With the cooler mornings, I have at least been motivated to make hot breakfasts the last couple of mornings. My kids love farina (Cream of Wheat) and grits, and homefried potatoes are alwaysa big hit. I’m sure I have shared the following dish at some point, but its such a simple dish, and so easy to dress up, it’s worth mentioning again.
I tend to have either red or yukon gold potatoes on hand at all time – they go into soups and stews, and they make for great breakfasts. I slice them into large cubes and fry in my cast iron skillet (covered) with a bit of oil, salt, pepper and sliced onion. That is the simplest way to prepare, but I wanted to make sure it had a protein kick, so I threw in some black beans, and corn (because Kyri loves corn). Served with some ketchup, this is a very filling breakfast.
