Simple Stroganoff

If you have read any of my Saving the Grocery Budget posts, you know we are working to get our grocery spending under control. One way I have been doing this is to make simpler meals. Honestly, while I love to cook and prepare elaborate meals, its makes more sense with our schedules to keep it simple (and inexpensive!) during the week and save the bigger meals for the weekend.
Wednesdays are one of our hectic evenings, as Kyri is now doing AWANA, so dinner is either leftovers, something in the crockpot, or a quick meal I have planned on the menu. This week, I threw together a simple stroganoff for dinner.
I’ll be honest – I don’t know if this is really a stroganoff. I grew up on boxed meals, and one such meal was stroganoff. It consisted of noodles with a brown sauce of some sort. So to me, noodles with a brown sauce equals stroganoff. My apologies if you are a purist.
For this dish, I prepped Punk Rock Chickpea Gravy from Vegan With a Vengeance, and mixed it in with a box of whole wheat elbow noodles. Simple and the family loved it!

Noodles are apparently the current favorite dish for Kyri, so I try to make sure the sauces I make with them are impactive. This gravy is awesome – chickpeas, nooch, onions, garlic and spices. Both kids loved it!
