More strawberries…

I prepped a double batch of Strawberry Jam – I ended up not having enough pectin on hand for a double batch so I went with the non-pectin recipe I used before. I canned three quarts of jam – one went into the fridge (and got used in another recipe) and two went into the pantry.
For another sweet treat, I decided to do a simple phyllo dessert. I thawed a pack of phyllo at room temperature for a couple of hours (normally I would have just moved it to the fridge the day before but I forgot).
I prepared this dessert in a 9×13 inch baking dish. I put five sheets of phyllo down – brushing each sheet with some melted Earth Balance. I then spooned 3-4 Tbsp of the homemade strawberry jam and spread evenly across the top layer. I then sprinkled 2-3 Tbsp of of the following mixture:
1/2 cup quick oats (if you use Rolled Oats, chop in a food processor to make smaller pieces)
1 cup slivered almonds, chopped into coarse pieces
1/4 cup sugar (I used some Maple Sugar I happened to still have in my pantry)
I continued layering this way – ending up with a total of 4-5 layers.
I then baked in a preheated oven set at 375F for 30 minutes. This was a very yummy dessert (and breakfast…)!
We have almost finished working through this forty pound order of strawberries.
